Ingredients for 1 servings:
- 2 banana(s), golden yellow
- 120 g flour
- 30 g cornstarch
- 2 tsp, leveled baking powder
- 100 g butter
- 1 pinch of salt
- 1 pinch of cinnamon
- 60 g cane sugar
- 2 eggs
- 100 g oat flakes
- 25 g chocolate (dark), roughly chopped
- ½ vanilla pod(s), the pulp
- Fat for the mold
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
enough for approx. 12 pieces
Preheat the oven to 175°C. Grease a muffin tin. Peel the bananas and mash them well. Combine the flour and cornstarch with the baking powder and oats in a bowl. In another bowl, mix the eggs, butter, brown sugar, cinnamon, salt, vanilla extract, chocolate, and banana puree well. Add the flour mixture and fold in. Pour the batter into the muffin tins. Bake in the preheated oven at 175°C on the middle rack for about 20 minutes. Tip: Serve garnished with melted chocolate or a banana liqueur icing.
