Ingredients for 12 servings:

  • 180 g butter, liquid, cooled
  • 3 eggs
  • 150 g sugar, baking sugar or icing sugar
  • 1 packet of vanilla sugar
  • 3 tbsp eggnog or milk
  • 220 g wheat flour, 550
  • 30 g pudding powder, vanilla
  • 2 tsp, heaped baking powder
  • 70 g melted dark chocolate
  • 1 tsp cocoa powder, unsweetened
  • 2 tbsp rum

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

very juicy and fluffy

Whisk the first 5 ingredients together with a whisk until smooth (not a mixer). In a second bowl, mix the next 3 ingredients, the dry ingredients. Now pour the wet ingredients into the flour and, starting in the center, quickly whisk with a whisk (not a mixer) until you have a thick batter. Place 12 paper baking cups into the muffin tin and fill each cup with up to 2/3 of the light batter. Mix the remaining batter with the chocolate, cocoa, and rum, stir until smooth, and spread over the light batter. Bake in a preheated oven at 175°C for approx. 18-20 minutes, using the top and bottom heat – fan oven at 160°C. Conclusion: Excellent in taste and overall texture. Very light and fluffy – just the way I like it!
