Ingredients for 1 servings:

  • 2 small zucchini
  • 300 g apples
  • 50 g almond(s), peeled
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 125 g butter, soft
  • 3 eggs
  • 140 g flour
  • 1 tsp baking powder
  • Powdered sugar, for dusting

Wash the zucchini, remove the blossoms and stems, remove the cores, coarsely grate, and drain in a sieve. Peel the apples, remove the cores, and thinly slice them. Finely chop the almonds. For the batter, mix the sugar with the vanilla sugar and cream together with the butter until fluffy. Gradually stir in the eggs, then the well-drained zucchini. Mix the flour with the baking powder and stir into the foam mixture. Preheat the oven to 200°C. Set the oven to 25 cm in a springform pan, pour in the batter, top with the apple slices, and sprinkle with the chopped almonds. Bake on the middle rack for about 30 minutes (test for doneness). Sprinkle the finished cake with powdered sugar. It will be wonderfully moist, and no one will know it’s from the zucchini!
