Ingredients for 1 servings:

  • ¼ kg wheat flour (type 405)
  • ¼ kg butter
  • ¼ kg sugar
  • ¼ kg hazelnuts, brown
  • ¼ kg spent grain *
  • 2 small eggs
  • 4 g nutmeg
  • 2 g cinnamon
  • 2 g clove powder
  • 20 g lemon peel

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Combine flour, butter, and sugar to form a dough, then add all the other ingredients and mix well. Roll out the dough thinly and cut out the pieces. Bake on a baking sheet at 220°C for 8-10 minutes. * Spent grains (sometimes also called spent grains, marc, or strained grains) are the leached residue from the malt during beer production (brewer’s spent grains), as well as the pressed grapes. Available from specialist bakeries or your local bakery.
