  • 190 g flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 2 eggs
  • 80 ml oil
  • 4 m.-large banana(s), ripe
  • 2 handfuls of raisins

Preheat the oven to 180°C (350°F). Grease the holes in a muffin tin or line them with paper baking cups. Combine the flour with the baking powder and baking soda. Whisk the eggs and briefly mix with the oil. Peel the bananas, mash them with a fork, and stir them into the egg mixture. Add the flour mixture and mix well. Add the raisins. Divide the batter (it should be moderately runny) evenly into the 12 muffin cups and bake for 20-25 minutes until golden brown. Tip: This recipe is very experimental. For example, you could add an apple and/or about 75g of chocolate flakes, cover the cooled muffins with melted chocolate and decorate with sugar flowers. These muffins are perfect for anyone with a dairy allergy. Instead of yogurt or buttermilk, bananas lighten the batter!
