Cheese noodles

Ingredients for 4 servings:

  • 500 g pasta, macaroni or Hörnli
  • 250 g cheese, sour cheese or Harzer cut into fine cubes
  • 250 g cheese, spicy Appenzeller, finely grated
  • 5 large onions, peeled and sliced
  • 2 tbsp butter
  • some salt
  • some pepper, from the mill
  • 8 tbsp applesauce, as desired

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat oven to 180 degrees Celsius. Melt butter in a pan and gently fry the onions until dark brown to black. Cook the pasta in salted water and set aside a large ovenproof dish. Add a little of each type of cheese to the bowl, then use a slotted spoon to scoop out some of the pasta from the water and add it to the dish. Add layers, alternating between cheese and pasta. Finally, mix everything well with a wooden spoon, season generously with pepper, add the onions on top, and return everything to the oven for 5 to 10 minutes to allow the cheese to melt properly. Applesauce can be eaten with the pasta, if desired. It can also be made with just Appenzeller cheese.
