Fine cinnamon muffins

Ingredients for 12 servings:

  • 55 g butter, room temperature
  • 60 ml oil
  • 100 g sugar, white
  • 60 g sugar, brown
  • 2 eggs
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • 1 ½ tsp cinnamon powder
  • 1 pinch of salt
  • some vanilla extract
  • 265 g flour
  • 240 ml milk
  • 2 tbsp butter, melted
  • some cinnamon sugar

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

They are quick to cook, super juicy and fluffy!

Arrange paper baking cups in a muffin tin and preheat the oven to 220°C. Place the butter, oil, and both sugars in a large mixing bowl and beat with a mixer. Beat in the eggs, one at a time. Add the baking powder, baking soda, cinnamon, and vanilla extract to this mixture and mix. Then add the flour and milk. Mix everything together to form a smooth, fairly runny batter. Fill the muffin cups 3/4 full and place them in the oven. For the cinnamon-sugar crust, brush the warm muffins with melted butter and dip them in the cinnamon-sugar mixture.
