perfect for spontaneous visits, makes 12 slices

Preheat the oven to 200°C. Line a baking sheet with baking paper. Roll out the puff pastry, cut crosswise into four strips, and then halve each strip to create 8 equal pieces. Repeat this process for all three packages of puff pastry. Whisk the egg with 1 tablespoon of milk. Generously brush the puff pastry with the egg and dust evenly with 50g of icing sugar. Bake in the oven for about 12 minutes until crispy. Remove the finished slices from the oven and let them cool on a wire rack. Meanwhile, mix the sour cream, the remaining milk, 2 tablespoons of icing sugar, and the vanilla pudding powder in a mixing bowl with a hand mixer until creamy. Spread the vanilla cream on half of the slices. Then spread the cherry compote on top. Finally, place the other half of the slices on top. Dust with the remaining icing sugar for decoration.
