Ingredients for 6 servings:

  • 4 egg yolks
  • 100 g powdered sugar
  • 2 pts. vanilla sugar
  • 250 ml cream
  • 6 tangerines
  • 1 orange(s), the juice
  • 2 tbsp rum
  • 14 ladyfingers

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Beat the egg yolks, powdered sugar, and vanilla sugar for about 8 minutes until frothy. Blend the cream until smooth. Cut the mandarins into small pieces. Fold the mandarin orange pieces and cream into the yolk mixture. Break the ladyfingers and arrange them in 6-8 glasses or 1 large bowl. Drizzle with orange juice and rum, then spread the cream over them. Garnish with dollops of cream and mandarin orange segments. Refrigerate until ready to serve.
