Quark-lemon dip

Ingredients for 4 servings:

  • 500 g quark
  • 1 lemon(s), untreated
  • 3 sprigs of lemon thyme
  • 3 stalks of lemon balm
  • 1 garlic clove(s)
  • Salt
  • Sugar

Instructions

Put the quark in a bowl and stir until creamy. Wash the lemon and peel it thinly with a knife or lemon peeler, being careful not to cut down to the bitter white pith. Finely chop the zest and squeeze half the lemon. Add the juice and zest to the quark. Be careful with the lemon juice at first. Wash the herbs. Pick the thyme leaves and finely chop the lemon balm leaves, and add both to the quark. Peel and chop a garlic clove, or press it through a garlic press, and add to the quark. Stir the quark well and season to taste with salt and a little sugar. The quark is very summery and fresh and goes perfectly as a dip with potatoes or vegetables, but also with pan-fried dishes.
