- 8 olives, black
- 2 spring onions, cut into rings
- 1 avocado(s)
- 2 tbsp cheese (Emmental), grated

I hope you enjoy my creation – I had it for brunch and it was a huge hit: Halve the avocado, remove the pit, and scoop out the flesh with a teaspoon. Mash the flesh and season with salt, pepper, and lemon juice. Halve the olives and fold them into the avocado puree along with the corn. Add the Emmental cheese and spring onions. Spread the mixture over the turkey ham slices and roll them up, placing the open edge on a platter. Refrigerate until ready to serve.
