Ingredients for 2 servings:

  • 2 turkey legs
  • 1 small onion(s)
  • 2 garlic cloves
  • 2 apples
  • 1 onion(s)
  • 2 tbsp butter
  • 125 ml water
  • 125 ml wine, white, good dry
  • 3 tbsp desiccated coconut
  • 4 grains of pepper, ground
  • 1 tsp turmeric
  • ½ tsp curry, without salt
  • 1 tsp salt
  • ½ lemon(s), juice
  • 2 tbsp honey
  • 3 cl balsamic vinegar
  • 6 potatoes
  • ¼ tsp caraway seeds

Brown the turkey legs well on all sides, add the chopped onion and garlic, add a little hot water now and then, cover and let simmer for 45-60 minutes, depending on your taste. We like the meat to come away from the bone. Sauté the chopped onion and coarsely grated apples (around the cracklings) in butter and water until soft, puree with an electric hand blender, then add all the ingredients in the order listed and bring to the boil. Boil the potatoes with their skins and caraway seeds, rinse with cold water, and peel. Depending on your taste, you can either skin the turkey leg or leave it whole.
