Avocado – potato – sauce

Ingredients for 4 servings:

  • 1 avocado(s)
  • 1 potato(s), boiled
  • ½ lemon(s), the juice
  • 2 cloves garlic
  • Salt
  • pepper
  • 2 spring onions
  • 3 tbsp cucumber(s), diced
  • 3 tbsp bell pepper(s), red and diced
  • 2 tbsp parsley, chopped

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Pit and peel the avocado. Mash the flesh with a fork. Peel and grate the cooked potato. Blend both with the juice of half a lemon until smooth. Press the garlic into the mixture, add salt and pepper. Stir in the spring onions, bell pepper, cucumber, and parsley. Serve with baked potatoes!
