Ingredients for 4 servings:

  • 4 pork schnitzels
  • Salt
  • Cayenne pepper
  • 2 egg yolks
  • 100 ml sour cream
  • 2 tsp mustard
  • 170 g bacon, diced
  • 1 onion(s) (vegetable onion), cut into strips
  • 250 g grated mountain cheese
  • 2 tbsp flour
  • 120 g breadcrumbs
  • 3 tbsp Clarified butter, for frying

Instructions

Working time approx. 40 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 40 minutes

Mix the sour cream with the egg yolks and mustard, flatten the schnitzels, and season. Coat the schnitzels first in flour, then in the sour cream mixture, and finally in breadcrumbs. Fry the schnitzels in hot clarified butter for about 4-5 minutes until golden brown. Let them drip dry on kitchen paper. Fry the bacon in the remaining frying fat. Add the onions and sauté for about 10-12 minutes. Season with cayenne pepper. Place the schnitzels in a dish, top with the onion mixture, and sprinkle with mountain cheese. Grill for about 15 minutes, until the cheese is melted.
