Potato soup with chives

Ingredients for 2 servings:

  • 1 kg potatoes, preferably soft-cooking variety
  • Milk, cream, butter to taste (and calories)
  • 1 cube of stock
  • salt and pepper
  • lots of chives, fresh
  • lots of nutmeg

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Boil potatoes in lightly salted water until tender. Mash in the boiling water. Add butter, cream, and milk to taste. Add stock cubes, pepper, and nutmeg, and a little more salt if desired. Chop chives into fine slices and add. Bring to a boil, and you’re done. Serve with buttered brown bread.
