Rum ball – cherry – muffin

Ingredients for 1 servings:

  • 350 g flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1 pinch of salt
  • 120 g butter
  • 120 g sugar
  • 2 eggs
  • 280 ml milk
  • 250 g jam (cherry jam)
  • 20 pieces of confectionery (small rum balls)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

great for Christmas, makes 20 muffins

Preheat the oven to 200°C and grease a muffin tin or line it with baking cups. Combine flour, baking powder, and baking soda in a bowl. In a second bowl, cream together butter, sugar, eggs, and milk. Stir in the flour mixture a spoonful at a time. Fill each muffin tin 3/4 full with batter. Place a rum ball and 1-2 teaspoons of jam on top of the batter and bake the muffins for about 20 minutes.
