Mascarpone cake without a base

Ingredients for 12 servings:

  • 6 eggs
  • 125 g butter
  • 250 g sugar
  • 500 g mascarpone
  • 750 g quark (low-fat quark)
  • 1 pack of pudding powder, vanilla
  • 2 tbsp cornstarch
  • Butter for the mold
  • breadcrumbs

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Separate the eggs. Cream the butter and sugar until fluffy. Gradually add the egg yolks. Stir in the slightly drained low-fat quark, the mascarpone, and the custard powder. Beat the egg whites until stiff and fold them into the mascarpone/quark mixture along with the cornstarch. Preheat the oven to 180°C. Grease a 28 cm springform pan with butter and sprinkle with breadcrumbs. Pour in the mascarpone/quark mixture and smooth it down. Bake for about 60 minutes until golden brown.
