Tomato-papaya salad with basil

Ingredients for 2 servings:

  • 1 papaya, ripe
  • 5 tomatoes, ripe
  • 1 tbsp olive oil
  • 1 tsp balsamic vinegar
  • 1 small bunch of basil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Halve the papaya, scoop out the seeds with a spoon, and remove the skin. Cut the flesh into bite-sized pieces. Wash the tomatoes and also cut them into bite-sized pieces. Season everything with olive oil, dark balsamic vinegar, salt, and pepper to taste. Finely slice the basil, toss into the salad, and let it marinate briefly. Tip: Finely sliced, the salad can also be served as a salsa with roasted chicken breast.
