Ingredients for 1 servings:
- 250 g flour
- 2 tsp baking powder
- ½ tsp baking soda
- 1 pinch of nutmeg
- 1 lemon(s), grated peel
- 50 g desiccated coconut
- 1 egg(s)
- 160 g brown sugar
- 100 ml oil
- 350 g buttermilk
- 1 tbsp lemon juice
- 150 g powdered sugar
- 1 tbsp lemon juice
- 4 tbsp desiccated coconut
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes
makes 12 – 16 muffins
Sift the flour and mix with the baking powder, baking soda, nutmeg, lemon zest, and coconut flakes. In a separate bowl, whisk the egg, then mix in the sugar, oil, buttermilk, and lemon juice. Then fold in the flour mixture. Pour the batter into a greased muffin tin or paper baking cups and bake in the oven at 160°C for 20-25 minutes. Let the muffins rest for 5 minutes and then cool on a wire rack. Mix the powdered sugar and lemon juice until smooth. Brush the muffins with this mixture and sprinkle with coconut flakes.
