Cucumber yogurt (raita)

Ingredients for 4 servings:

  • 1 cucumber(s)
  • 2 tbsp onion(s), finely chopped
  • 350 g yogurt
  • 1 tbsp oil (safflower oil, if desired)
  • ¼ tsp cumin
  • ⅛ tsp cayenne pepper
  • Salt
  • Coriander leaves, chopped or
  • dill
  • Parsley, flat
  • possibly cress

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

served with Indian food

Peel and deseed the cucumber, coarsely grate it, combine it with the onions, and mix thoroughly with the yogurt and oil. Briefly heat the cumin in a non-stick pan, remove from the heat, and quickly stir in a little of the yogurt mixture. Return the mixture to the rest and mix thoroughly. Finally, season to taste with the spices and herbs. Serve chilled with curries. It also tastes great as a side dish with barbecues.
