Ingredients for 4 servings:

  • 400 ml melon(s) (puree) from a Galia, honeydew or watermelon
  • 3 tbsp syrup (elderflower)
  • 1 bag of jelly, lemon
  • 1 tsp sweetener, liquid
  • 100 ml water
  • 6 leaves of lemon balm

Combine the sugar-free jelly powder with just 100 ml of water in a saucepan and dissolve over gentle heat, stirring until the liquid becomes clear. Do not boil! Quickly stir in the elderflower syrup and melon puree, and sweeten to taste. Non-diabetics can also sweeten with powdered sugar to taste and stir it into the mixture. Pour into a bowl or 4 small glasses, cover, and refrigerate for a few hours. Garnish with lemon balm. This dessert contains less than 1 BE per serving and is completely fat-free! Incidentally, the less expressive the melon, the more it tastes of elderflower syrup.
