Quinoa chocolate muffins

Ingredients for 1 servings:

  • 2 cups quinoa, cooked
  • 4 eggs
  • ½ cup sugar
  • ½ cup erythritol (sugar substitute)
  • ½ cup rapeseed oil
  • 1 cup almonds, ground
  • 2 tbsp, heaped vanilla sugar
  • 1 packet of baking powder
  • 1 cup baking cocoa
  • ½ cup milk
  • 1 pinch of salt
  • possibly powdered sugar or chocolate icing for decoration

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

for 12 muffins, no flour, low sugar

The cup I used holds about 200 ml. Mix all the ingredients together and divide the thick batter into 12 muffin cups. Bake in a preheated oven at 180 degrees Celsius for about 20-25 minutes. Let the muffins cool and decorate with powdered sugar or chocolate icing.
