Ingredients for 1 servings:
- 2 cups quinoa, cooked
- 4 eggs
- ½ cup sugar
- ½ cup erythritol (sugar substitute)
- ½ cup rapeseed oil
- 1 cup almonds, ground
- 2 tbsp, heaped vanilla sugar
- 1 packet of baking powder
- 1 cup baking cocoa
- ½ cup milk
- 1 pinch of salt
- possibly powdered sugar or chocolate icing for decoration
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes
for 12 muffins, no flour, low sugar
The cup I used holds about 200 ml. Mix all the ingredients together and divide the thick batter into 12 muffin cups. Bake in a preheated oven at 180 degrees Celsius for about 20-25 minutes. Let the muffins cool and decorate with powdered sugar or chocolate icing.
