Cucumber and mint salad with yogurt dressing

Ingredients for 2 servings:

  • 1 cucumber(s)
  • 2 sprigs of mint, for garnish
  • 75 g yogurt
  • 25 g buttermilk
  • 1 tbsp vinegar
  • 1 tsp walnut oil or grapeseed oil
  • 1 pinch(s) of sugar
  • e.g. salt and pepper
  • 2 tbsp mint, freshly chopped

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cut the cucumber into strips using a julienne peeler. Let the strips stand for a moment, then drain off any excess water and add a little salt to the cucumber strips. Make the dressing from the ingredients and season to taste. Place the cucumber strips in small bowls or on plates and drizzle with the dressing. Garnish with mint.
