Ingredients for 1 servings:

  • 1 egg(s)
  • 100 g flour
  • 15 g durum wheat semolina
  • 2 tbsp mineral water
  • some salt
  • Flour for rolling out

Working time approx. 15 minutes; Cooking/baking time approx. 6 minutes; Total time approx. 21 minutes

easy to process without a pasta machine

Mix all ingredients with the dough hook of a hand mixer until you have a firm, elastic, and smooth dough. Add a little more flour if necessary. If the dough comes out of the bowl without any residue, it has the right consistency. Let it rest for about 30 minutes before further processing. Then roll out the dough, process it in a pasta machine, or cut it into strips for tagliatelle. Because the dough rolls out very thinly, it can be easily processed without a pasta machine. Depending on the thickness, the pasta needs about 5-8 minutes in plenty of boiling salted water until al dente.
