Ingredients for 2 servings:

  • 2 spare ribs, plain
  • 1 serving BBQ rub
  • 1 handful of smoking chips

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 2 hours; Total time approx. 4 hours 15 minutes

Then peel off the silver skin on the inward-curving side. Then rub them well on all sides with the BBQ rub spice mix and leave to sit in the fridge for about 2 hours. Preheat the grill and light the previously soaked smoking chips. Grill the spare ribs quickly and then grill them over indirect heat on the lowest setting for about 2 hours with the inward-curving side facing up. This allows the meat juices to collect and be absorbed back into the meat. The ribs are done when you can pull two bones together and they come away from the meat easily. Serve with homemade baked potatoes with a herb dip.
