Ingredients for 4 servings:
- 600 g cod fillet(s)
- 2 tbsp pesto (basil)
- 8 slices of breakfast bacon
- 250 ml tomato(s), pureed
- some salt
- some pepper
- a few stalks of basil
- olive oil
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes
Preheat oven to 170°C. Lightly salt the fish. Spread a thin layer of basil pesto on one side. Wrap each slice of bacon around it. Brush an ovenproof dish with olive oil. Place the fish in the dish. Roast in the center of the oven for 12–15 minutes, depending on the thickness of the fish pieces. Bring the tomato sauce to a boil and season with salt and pepper. Arrange the fish fillets on top of the sauce. Garnish with basil. Serve with leaf spinach and rice.
