Doughnut muffins with cinnamon and sugar

Ingredients for 1 servings:

  • 230 g applesauce, unsweetened
  • 170 g sugar
  • 120 g wheat flour
  • 100 g almond milk (almond drink)
  • 85 g wholemeal flour
  • 75 g olive oil
  • 2 tbsp maple syrup
  • 1 tsp cinnamon
  • ½ tsp salt
  • 1 packet of baking powder

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Vegan and quick to prepare, makes 20 muffins

Preheat the oven to 200°C. Line a muffin tin with baking cups. In a large bowl, combine flour, sugar, baking powder, salt, and cinnamon. In another bowl, combine applesauce, almond milk, oil, and maple syrup. Stir the wet mixture into the dry mixture until well blended. Fill the muffin tins two-thirds full and sprinkle with cinnamon and sugar. Bake for 20 minutes, then let the tin cool for at least 20 minutes. Transfer to a wire rack and let cool completely.
