Bean soup with meatballs

Ingredients for 6 servings:

  • 500 g minced meat, mixed
  • 2 jars of beans (green beans)
  • 500 g potato(s), waxy
  • 2 liters of vegetable broth
  • 2 tbsp, heaped savory, dried
  • 1 shallot(s) or other small onion
  • 1 stale roll
  • salt and pepper

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 5 minutes

Soak the bread roll in lukewarm water and then squeeze it dry. Finely chop the onion. Knead the minced meat, onion, bread roll, salt and pepper into a meat dough. Then roll into small balls and set aside. Peel the potatoes and cut into fine cubes with sides of approx. 1 cm. Cook these in salted water for 6-8 minutes, drain well and set aside. Bring the vegetable stock to a boil in a large pot. Add the meatballs and simmer for approx. 15 minutes. About five minutes before the end of the cooking time, add the savory and stir in. Drain the beans from the jar and add them to the soup. Finally, add the potatoes and season with salt and pepper if desired. Serve with hearty bread. This dish is very popular in our family and especially enjoyed by the children.
