High Protein Waffles

Ingredients for 2 servings:

  • 2 eggs
  • 1 tbsp chia seeds
  • 3 tbsp water
  • 1 pinch of salt
  • 40 g protein powder, vanilla flavor
  • 3 drops of stevia or sweetener
  • 50 g butter, liquid
  • 150 g low-fat curd cheese
  • 100 g wheat flour, type 1050
  • 40 g rye flour, type 997
  • some lime zest, grated
  • 100 ml whole milk
  • 50 ml oat milk (oat drink)
  • 100 ml mineral water, medium

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

First, separate the eggs, beat the egg whites with the salt until stiff, and set aside. Mix the chia seeds with the water and let them swell for a few minutes. Carefully mix the egg yolks with the egg white powder, the lime zest, and, if desired, stevia or sweetener. Stir in the swollen chia seeds and the quark. Combine the two flours and add them to the quark and egg mixture with the melted butter. Mix the milk, oat milk, and water. Gradually stir the batter with the liquid until smooth. Carefully fold in the beaten egg whites. The batter is quite thick/stiff and yielded 6 round waffles for me. To make more or thinner waffles, vary the liquid and increase the amount of water if necessary. Depending on your waffle iron, pour 2-3 tablespoons of batter into the greased, preheated iron and bake the waffles. They will be a little darker than my regular waffles at the same temperature, so it’s best to check them occasionally. The waffles have a relatively neutral taste, especially if you leave out the sweetener. This means they can be topped with either savory or sweet toppings. I found they tasted best with a bit of agave syrup. If you stack hard/solid waffles on top of each other after baking, they become nice and soft – it’s up to you to decide. The whole milk can certainly be replaced with low-fat milk, but that’s all I had on hand. The oat milk can also be replaced with milk, soy milk, or rice milk. Protein powder can be purchased at dm or Rossmann in the sports nutrition section, for example. Chia seeds can be found at health food stores, Müller, or dm.
