Ingredients for 4 servings:
- 150 g smoked and streaky bacon
- 1 tbsp oil
- 2 onions
- 2 can/n corn kernels, 425 g each
- 1 can/n white beans in tomato sauce
- 1 can/n tomatoes
- 1 tbsp broth, granulated
- salt and pepper
- Parsley
- Paprika powder, sweet
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes
Cut the bacon into thin strips. Heat oil in a pan and fry the bacon until crispy. Chop the onions. Drain the corn. Add the diced onions and fry in the bacon fat. Add the corn, beans, and tomatoes with their liquid to the pan. Simmer for 5 minutes, stirring occasionally. Season the vegetables generously with broth, salt, pepper, and paprika. Wash and chop the parsley, and sprinkle it over the vegetables just before serving.
