Colorful zucchini noodles with feta cheese and fresh herbs

Ingredients for 4 servings:

  • 500 g pasta
  • 3 zucchini, yellow and green
  • 2 sheep’s cheeses
  • 1 chili pepper(s), red, dried
  • Thyme
  • basil
  • 1 nutmeg
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Wash the zucchini and cut into small strips. Heat olive oil in a pan and add the zucchini. Meanwhile, finely chop the herbs. I rub the finely chopped herbs between my hands to release the aroma better. Add the herbs to the zucchini, season with salt and pepper, and mix in the chopped chili pepper. Cook the pasta until al dente. Meanwhile, continue to simmer the zucchini. When the pasta is cooked, add the zucchini. Crumble the feta cheese with your hands and add it. Mix everything together. Tip: If you like, you can also add fresh tomatoes. It also tastes delicious. A dish that’s quick to prepare and particularly delicious in summer.
