Creamed carrots with basil

Ingredients for 2 servings:

  • 400 g carrot(s) (bunched carrots)
  • 200 ml sweet cream
  • 2 shallots
  • ½ tsp sugar
  • salt and pepper
  • some butter
  • basil, fresh

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the carrots, leaving them whole! Finely chop the shallots. Gently sauté them in a little butter and sugar until golden brown. Add the carrots and mix. Pour in the cream, finely slice half of the basil, add it, and simmer over low heat for about 20 minutes. Finally, open the pan; everything should reduce to a creamy consistency. Serve and garnish with the remaining sliced ​​basil. Goes well with pan-fried dishes like veal escalope or chicken escalope and snow potatoes.
