Ingredients for 4 servings:

  • 500 g whipped cream
  • 50 g sugar
  • 1 lime(s), zest
  • 3 sheets of gelatin
  • 150 g blackberries
  • 150 g raspberries

Working time approx. 15 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 15 minutes

a classic – slightly modified

Bring the cream to a boil with the sugar and lime zest, then simmer gently for about 10 minutes. Soften the gelatin according to the package instructions, squeeze out the excess liquid, and dissolve it in the still-warm cream. If desired, you can strain the mixture through a sieve to remove the lime zest. Pour into a bowl and refrigerate for about 4 hours to set. Then turn out of the mold, cut into nice slices, and serve with the berries.
