- 60 g balsamic vinegar, dark
- 60 g balsamic vinegar, light
- 60 g Crema di Balsamic vinegar
- 60 g rapeseed oil
- 90 g agave syrup
- 1 tsp, leveled salt

Combine all ingredients in a bottle and shake vigorously. Keep the bottle clean during preparation and keep it in a cool, dry place. This dressing will keep well for several months, even unrefrigerated. The ingredients are deliberately given in grams, as I always mix everything on a kitchen scale. It’s a classic accompaniment to tomato and mozzarella, leaf salads, and the like. I add fresh spices like basil, oregano, or pepper as needed.
