Mango chutney a la Gabi

Ingredients for 1 servings:

  • 1 large mango(s)
  • 1 green pepper
  • 1 piece(s) ginger root
  • 1 tsp salt
  • 1 tsp double cream
  • 2 tsp brown sugar
  • 3 tbsp desiccated coconut
  • 1 tsp mint, finely chopped leaves

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the mango, remove the flesh from the stone, and chop finely. Remove the stem from the chili pepper, deseed, and roughly chop. Peel and dice the ginger. Puree the mango, chili pepper, ginger, salt, double cream, and sugar in a blender. Transfer the puree to a bowl and sprinkle with desiccated coconut and mint leaves. Tip: If the mango is fully ripe and sweet, you can reduce the amount of sugar.
