Apple poppy seed muffins with white chocolate

Ingredients for 1 servings:

  • 200 g butter, soft
  • 4 large eggs
  • 1 packet of vanilla sugar
  • 1 tsp, heaped baking powder
  • 50 g ground almonds
  • 2 tsp vanilla paste
  • 1 tbsp poppy seeds
  • 250 g sugar
  • 100 g flour
  • 100 g white chocolate, finely chopped
  • 2 apples (Boskoop)
  • 2 tsp cinnamon powder
  • Paper cups
  • possibly granulated sugar or powdered sugar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

makes 12 pieces

Peel and core the apples, and cut into pieces approximately 1 x 1 x 0.3 cm in size. Finely chop the white chocolate, preferably with a sharp knife. Cubes no larger than 5 mm in size! Preheat the oven to 180°C and line a muffin tin with baking cups. Combine the butter, eggs, vanilla sugar, baking powder, ground almonds, vanilla paste, poppy seeds, sugar, flour, and cinnamon in a bowl and mix with a mixer until you have a smooth, even batter. Add the apples and chocolate chips and mix in with a spoon. Fill the muffin tins with batter to just a few millimeters below the rim. Bake in the center of the oven for approximately 25-30 minutes. Let cool and garnish with granulated or powdered sugar, if desired.
