Gnocchi with Gorgonzola

Ingredients for 4 servings:

  • 500 g gnocchi
  • 250g Gorgonzola
  • 50 g butter
  • Parmesan, (Parmigiano Reggiano)
  • Salt
  • pepper
  • nutmeg
  • Extra virgin olive oil

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

One of the simplest variants

For the sauce: Melt the butter over low heat. Tear the Gorgonzola into small pieces and add it to the butter. Melt slowly while stirring, then season with a little nutmeg and pepper. Grate the Parmigiano Reggiano and add a handful to the butter and Gorgonzola mixture. Generously salt the water for the gnocchi and prepare the gnocchi according to the package instructions. When the gnocchi are cooked, remove them from the water and add them to the butter and Gorgonzola mixture. Reserve about a cup of the cooking water and gradually add it to the mixture until you have a smooth sauce. Arrange the gnocchi on deep plates and drizzle with a dash of olive oil.
