Ingredients for 1 servings:

  • 150 g flour
  • 150 g almonds, peeled, grated
  • 100 g sugar
  • 150 g butter or margarine
  • 1 egg(s)
  • 1 egg yolk
  • 1 tsp vanilla sugar (bourbon vanilla)
  • 200 g powdered sugar
  • 3 tsp vanilla sugar

Instructions

Working time approx. 40 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 40 minutes

Crumble the butter with the flour, sugar, almonds, vanilla, and a pinch of salt. Add the whole egg and egg yolk, knead quickly, and let the dough rest in a cool place for about an hour. Form the dough into rolls, cut off small pieces, and shape them into croissants. Place on a baking sheet lined with baking paper and bake at about 175°C for 8-10 minutes. Mix the powdered sugar with the vanilla sugar. Roll the croissants in the mixture while they are still hot. Place in an airtight container; they will keep for several weeks if kept refrigerated.
