Ingredients for 1 servings:
- 80 g pumpkin seeds, finely chopped
- 180 g wholemeal flour
- 150 g butter
- 40 g powdered sugar
- 1 tsp cinnamon powder
- jam
- Chocolate glaze
- Pumpkin seeds for decoration
Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 40 minutes
Christmas biscuits, makes about 60 pieces
Knead pumpkin seeds, flour, butter, powdered sugar, and cinnamon powder into a shortcrust pastry. Let it rest in a cool place for 1 hour. Roll out the dough and cut out any desired cookies. Bake at 180°C (top/bottom heat) for about 10 minutes. Place two cookies together with apricot jam, cover with chocolate glaze, and decorate with pumpkin seeds. Makes about 60 cookies.
