Sweet potato mash with curry

Ingredients for 3 servings:

  • 2 sweet potatoes
  • 3 large carrots
  • 1 onion(s), red
  • Salt
  • 100 g butter
  • 1 tsp curry powder
  • ½ large lemon(s), the juice
  • 2 tbsp sour cream

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the sweet potatoes, carrots, and onion, cut them into equal-sized cubes, and bring to a boil in a little salted water. Cover and simmer until softened, about 20 minutes. Heat the butter in a small saucepan. Briefly sauté the curry while stirring, then deglaze with the lemon juice. Drain the cooked potatoes and carrots and add them to the butter. Fold in the sour cream. Blend everything with a hand blender until smooth.
