Blond Blueberry Brownie Muffins

Ingredients for 10 servings:

  • 150 g white chocolate
  • 100 g butter
  • 2 eggs
  • 150 g sugar
  • 125 g flour
  • ½ tsp baking powder
  • ½ tsp salt
  • 80 g ground almonds
  • 1 jar blueberries, or 200 g fresh

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Blueberry muffins in brownie style with white chocolate

Line the muffin tins with paper baking cups. Melt 100g of chocolate with the butter (best in a double boiler) and let cool briefly. Drain the blueberries from the jar, hull the fresh ones, and mix with the almonds. Chop 50g of chocolate. Beat the eggs with the sugar until frothy. Add the chocolate mixture. Also add the flour, baking powder, and salt. Finally, stir in the blueberries, almonds, and chopped chocolate and divide the mixture into the muffin tins, being careful not to add too little, as they are brownie-like and won’t rise much. Bake at around 160°C (fan-assisted, preheated) for about 25-30 minutes. Decorate with chocolate and blueberries as desired, or glaze with powdered sugar and the reserved blueberry juice.
