Gnocchi in white wine sauce with ham

Ingredients for 4 servings:

  • 1 pack of gnocchi (600 g)
  • e.g. chicken broth or beef broth
  • 400 ml cream
  • 180 ml white wine
  • 3 slice(s) of ham (Prosciutto Cotto)
  • 3 spring onions
  • 1 can mushrooms, cut into strips
  • 4 tbsp cheese (Pecorino)
  • 2 egg yolks
  • 1 onion(s), diced
  • some garlic (garlic duo, frozen)
  • salt and pepper
  • Italian herbs (frozen)
  • Parsley
  • some oil
  • some lemon juice, some dashes

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Sauté the onions and garlic in oil until translucent. Add the ham and deglaze with cream. Simmer for about 5 minutes, stirring occasionally, then deglaze with the wine and reduce for another 10 minutes. Meanwhile, let the gnocchi simmer in boiling chicken or beef stock for about 1 minute, then refresh. Add the spring onions and mushrooms to the sauce and continue cooking over medium-high heat, seasoning with salt and pepper. In a small bowl, combine the egg yolk, cheese, and lemon juice and stir into the sauce until dissolved. The white wine sauce should now thicken slightly. Add the well-drained gnocchi to the sauce and mix, seasoning with salt and pepper if necessary. Add the herbs, turn off the heat, and let the gnocchi simmer for a few more minutes with the lid on. Arrange on a plate. Sprinkle with parsley and, if desired, a little Pecorino cheese and serve.
