- 1 large eggplant(s)
- 1 egg(s)
- some breadcrumbs
- salt and pepper
- olive oil

Wash the eggplant, remove the ends, and cut the rest into approximately 1.5 cm thick slices. Heat the olive oil in a pan. Whisk the egg and season with salt and pepper. Then coat the eggplant slices first in the olive oil and then in the breadcrumbs. Add to the hot pan and fry on both sides until the slices are browned. Serve with ketchup and rice.
