Sour cherry mousse à la Didi

Ingredients for 5 servings:

  • ½ liter cherry juice (sour cherry juice), from pickled cherries
  • 3 tbsp sugar
  • 2 cups whipped cream
  • 2 packs of cream stiffener
  • 1 pack of pudding powder (cream pudding powder)

Instructions

Working time approx. 10 minutes; Rest period approx. 1 day; Cooking/baking time approx. 5 minutes; Total time approx. 1 day 15 minutes

Take 6 tablespoons of the cherry juice and bring the rest to a boil. In the meantime, mix the 6 tablespoons of juice with the sugar and pudding mix. Remove the boiling juice from the heat and stir in the mixed pudding mix. Return the mixture to the heat while stirring continuously and bring to a boil for about 1 minute. Cool the pudding while stirring and then refrigerate overnight. Whip the cream with the cream stiffener until stiff peaks form. Whip the pudding in a food processor or with a hand mixer. Fold in half of the cream and then mix with the pudding, first on the lowest speed and then on the highest speed. Divide the mousse between dessert bowls and serve with the remaining whipped cream.
