Caramel cream

Ingredients for 4 servings:

  • ½ liter of milk
  • 4 tbsp sugar
  • ⅛ liter of water
  • 30 g sugar
  • 40 g cornstarch
  • 3 tbsp milk
  • 1 cup of cream

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 45 minutes

First, caramelize the 4 tablespoons of sugar in a saucepan and deglaze with the 1/8 liter of water. Bring the half liter of milk to a boil in a separate saucepan and add the caramel. Combine the sugar, cornstarch, and milk in a cup and stir into the boiling milk. Bring to a boil and then let cool. Whip the cream until stiff and fold into the cooled cream. Serve the cream in glasses and garnish with whipped cream, if desired.
