Apple pudding

Ingredients for 4 servings:

  • 675 ml apple juice, unsweetened
  • 45 g cornstarch
  • 60 g sugar
  • e.g. vanilla sugar

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 10 minutes

I use apple juice, which I make myself in a steam juicer. I also make my own vanilla sugar, using 40g sugar and 20g vanilla sugar. The pudding can also be made with “ready-made” apple juice and vanilla sugar. Pour 500ml of apple juice into a saucepan and bring to a boil over medium heat. Meanwhile, combine the cornstarch, sugar, and vanilla sugar. Mix thoroughly with the remaining juice. As soon as the juice boils, stir in the cornstarch-sugar mixture and whisk well to dissolve the sugar. Bring back to a boil. Pour into a bowl or dessert dish and let cool. Vanilla sauce goes very well with this.
