or Scheppkließ, flour dumplings

Combine flour, salt, and egg in a bowl and mix with a splash of milk until smooth. If the dough is still too sticky, just add a little more milk, but the dough should still be a bit tougher, like spaetzle dough. Boil salted water in a pot and then scoop out dumplings one tablespoon at a time. When the dumplings float to the top, I let them sit for another 3 or 4 minutes and then scoop them out. You can also fry the dumplings in a pan with bacon for a more savory flavor. That’s how my grandma and mom always did it, but since neither of us is a fan of bacon, we simply leave it out. They can also be tossed in butter, but it’s not necessary. We always serve them with canned fruit of your choice (for the liquid; otherwise, as mentioned, the dumplings are quite dry). They’re quick to prepare and very popular with children. I always make three times the amount, so 3 eggs for every 300g, as indicated above. For us, that’s a good portion for mom and two (small) children.
