Potato and cucumber salad

Ingredients for 4 servings:

  • 1.2 kg potatoes, waxy
  • 1 small jar of Miracle Whip
  • 12 gherkins
  • ¾ cucumber(s)
  • 2 small onions
  • 3 tbsp oil
  • 2 tsp mustard
  • salt and pepper
  • Cucumber juice

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 50 minutes

Boil the potatoes and let them cool. Then peel and slice them. Thinly slice the gherkins. Mix together the Miracle Whip, oil, mustard, salt, pepper, and pickle juice, if desired. Pour over the potatoes and fold in. Refrigerate for a while. Shortly before serving, peel and halve the cucumber, and scoop out the seeds with a spoon. Grate the cucumber into the potato salad and fold in.
