Viennese-style herring salad

Ingredients for 4 servings:

  • 1 jar Matjes fillet(s) , (750 ml) with onions and liquid
  • 3 m.-sized potatoes, cooked the day before
  • 1 apple
  • 3 m.-large cucumber(s), (pickles)
  • 1 cup sour cream
  • 2 eggs, hard boiled
  • 1 bell pepper(s), green
  • 1 bell pepper(s), red
  • 1 small can of corn kernels
  • salt and pepper
  • Sugar
  • oil
  • Vinegar

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Chop everything into small cubes, mix, and season with salt and pepper. Let it sit for 1-2 hours. Then line a plate with green lettuce leaves that have been marinated in a mixture of oil, vinegar, water, salt, and sugar. Arrange the herring salad on top.
